Recipe: Pizza di bosco

Canadian Pizza magazine Chef of the Year Rodolfo Santo’s Pizza di bosco (Pizza from the woods) is a pepperoni pizza with mushrooms dal bosco (wild forest mushrooms) – including cremini, chanterelles and porcini – ricotta-infused mozzarella and fresh herbs.


  • High-gluten flour
  • Powdered malt
  • 72-hour fermentation


  • Tomato sauce featuring a combination of field-grown and organic tomatoes and fresh herbs


  • Pepperoni
  • Mushroom mixture of cremini mushrooms, chanterelles and porcini
  • Ricotta-infused mozzarella

Purée porcini mushrooms and pour this “porcini glaze” over the mushroom mixture.
