Canadian Pizza magazine Chef of the Year Rodolfo Santo’s Pizza di bosco (Pizza from the woods) is a pepperoni pizza with mushrooms dal bosco (wild forest mushrooms) – including cremini, chanterelles and porcini – ricotta-infused mozzarella and fresh herbs.
Dough
- High-gluten flour
- Powdered malt
- 72-hour fermentation
Sauce
- Tomato sauce featuring a combination of field-grown and organic tomatoes and fresh herbs
Toppings
- Pepperoni
- Mushroom mixture of cremini mushrooms, chanterelles and porcini
- Ricotta-infused mozzarella
Tip
Purée porcini mushrooms and pour this “porcini glaze” over the mushroom mixture.
