The cassette can be completely removed from the cabinet, providing ready access to all refrigeration areas for improved cleaning, sanitation and service access. It can also be removed from the location for maintenance and service in less than five minutes, minimizing impact on traffic in busy foodservice and retail locations. Removal of the cassette eliminates possible airborne contaminants being released into food preparation areas during cleaning.

New labels
Standard food labelling methods often leave a sticky residue behind which can harbour bacteria and contribute to the spread of foodborne illnesses.

Bake 100 Pizzas in Eight Minutes
rational-trayThe new Rational pizza dish and pizza and grill tray accessories enable chefs and caterers to bake large quantities of pizza to hand-made perfection in the company’s SelfCooking Center.

The pizza dish, which is designed for use in the mobile plate rack, is manufactured with a special non-stick coating and accommodates pizzas up to 11 inches in diameter. One hundred prebaked pizzas can be ready in just eight minutes. The pizza dishes are ideal for school and corporate catering events when large amounts of people need to be served in a small amount of time.

The pizza and grill tray accessory is designed for baking pizza, tarts and flatbreads. The tray remains hot in the cooking cabinet while the radiant heat guarantees the pizza toppings are always moist and the crust is crispy. Pizza chefs can also monitor the baking time of several pizzas individually.

New packaging
Genpak LLC., headquartered in Glens Falls, N.Y., a manufacturer of foodservice packaging has introduced a new line of biodegradable and compostable foodservice products under their Harvest Collection brand. 

This line is manufactured from annually renewable resources such as corn and is BPI certified to fully compost when placed into a commercially run composing facility.

Available are a full range of dinnerware including: 6-inch, 9-inch, 10 1/4-inch (one and three compartment) plates and bowls along with two larger serving bowls 24- and 32-ounce (available with lids), a single and three compartment, medium, hinged container along with a 16-ounce cold drink cup (cup available both plain and printed with the Harvest logo).
