Demonstration: Modern Mixers

Chef Michael Bou-Younes, lead instructor at Faema Culinary Academy, will take us through a demonstration of spiral and twin-arm mixers, discussing the relative balance between mixing techniques, hydration levels and the differences in the type of pizza produced. Pizzaiolos will see two batches of dough mixed side by side in two different mixers to help them decide which mixer or style of dough makes sense for their business.
