Past Chef of the Year Joe Leroux describes the conception and execution of his Australian-themed “Down Under” pizza where he literally flips the cheese pizza on its head by baking the cheese on the bottom.

Joe Leroux, owner of Amadio’s Pizza in Port Credit, Ont., and our 2016 Chef of the Year, has been recognized by his community with several awards for community service including the Pizza With Purpose award. Joe is a 45-year veteran of the industry, having owned and operated Amadio’s for the last 30 years. He recently set up shop as a consultant. He has competed at the Caputo Cup in Naples, Italy, and at Pizza Expo in Las Vegas. He has also served as a judge at the Canadian Pizza Summit and at Pizza Expo.
