
‘Sweet cloud’ cheese has fluffy texture

Taste for Luxury Rare and Precious Foods has a delicate cheese called Dolce Nuvola made with full-fat, pasteurized milk.
“Dolce Nuvola,” which means “sweet cloud” in Italian, tastes sweet and delicate, according to the product’s specifications.
“It’s fluffy and light but it has a great texture similar to that of a fresh ricotta,” said Maja Tomic, founder and owner of the company, which is based in Kingston, Ont. “It’s a very unique item. The product can be consumed alone with just some bread, pasta filling, or can be used in cooking (even on cheesecake).”
The cheese is produced by farmers in the Cremona region of Italy. It is versatile and new to the Canadian market, Tomic said.
Suggested pairings include white wine, blueberry jam, acacia honey or wholemeal bread.
