Here’s a pizza that just may just lay to rest any debate about pineapple on pizza. Last year Khrystyna Collins of Applestone Pizzeria in Burlington, Ont., brought this fruit-laden pie to the Chef of the Year competition at the Canadian Pizza Show.

INGREDIENTS

00 flour
Tomato sauce
Bocconcini
Pancetta
Basil
Cherry tomato
Pineapple
Caramelized onions
Parmesan
Honey
Seasonings
Extra virgin olive oil

METHOD
This pizza is a thin crust pizza made with 00 flour. There is a tomato sauce base with pancetta, basil, cherry tomatoes, pineapple, bocconcini and caramelized onions. After it is cooked, the pizza has a light layer of Parmesan and is drizzled with honey.


Khrystyna Collins is a pizza maker at Applestone Pizzeria in Burlington, Ont. Khrystyna finished in second place in the Canadian Culinary Federation Toronto Championship pizza competition in 2017.
