The fine chop of the veggies melts in with the cheese and chicken for a
pleasing flavour combination

These are also delicious served cold.

You can find frozen whole-grain or whole-wheat dough at your local bakery or grocery store.

Pizza Pouches

250 ml (1 cup) shredded cheddar cheese

125 ml ( 1/2 cup) corn kernels

125 ml ( 1/2 cup) shredded yellow or green zucchini

125 ml ( 1/2 cup) shredded carrot

125 ml ( 1/2 cup) finely diced seeded tomato

175 ml (3/4 cup) finely diced cooked chicken, turkey or ham

30 ml (2 tbsp) thick salsa or tomato sauce

500 g (1 lb) frozen whole-wheat or whole-grain pizza dough, thawed

In a medium bowl, combine cheese, corn, zucchini, carrot, tomato, chicken and salsa. Set aside.traditionalpizza

Divide
pizza dough into 8 pieces. On a lightly floured work surface, roll out
each piece of dough to a circle about 10 cm (4 inch) in diameter and 5
mm ( 1/4 inch) thick. Spoon vegetable mixture evenly onto half of each
round. Fold other half over filling to create semicircle. Crimp and
seal edges.

Bake on parchment paper-lined baking sheet in 230 C
(450 F) oven for 15 to 20 minutes or until golden brown. Let stand for
5 minutes before serving. Or let cool in refrigerator; reheat in oven
or microwave.

Makes 8 pizza pouches.

Nutritional information per serving: 190 calories, 12 g protein, 4 g fat, 29 g carbohydrates.
