We have a bonus for attendees of the Canadian Pizza Summit! The evening before the Summit you are invited to stop in for an oven briefing, chat with exhibitors, meet the staff of Canadian Pizza magazine and stay for a pizza class!

Yes, you heard that right! On Sunday, Oct. 20, you are invited to join Michael Bou-Younes, lead instructor at Faema Culinary Academy, for a hands-on class on how to make top-notch Napoletana pizza!

Guided by Chef Michael, students will participate in an interactive course focusing on the science, technique and essence of making the popular pizza style that originated in Naples.

Following an explanation of the theoretical science of the pizza style, students can expect a fun hands-on experience of mixing, kneading, constructing and baking the pizza in both electric and gas ovens. This includes sampling of Galbani cheeses!

From 4-5 p.m. on Sunday, Oct. 20, visit the showroom and Faema Culinary Academy kitchen, talk with Chef Michael and the folks at Faema, and get some early one-on-one time with exhibitors. Competitors: this is your chance to get questions answered and check out state-of-the-art ovens.

The Napoletana Pizza Class is sponsored by Parmalat, makers of Galbani Professionale and other cheeses. It is open to pizzeria operators and their staff on a first come, first served basis. The class is free to attendees, but to be included, you must sign up ahead of time (even if you’ve signed up for the show already).

The Canadian Pizza Summit on Monday, Oct. 21, and this bonus day on Sunday, Oct. 20, are designed with independent pizza makers in mind! Take advantage of this FREE learning, sourcing and networking time!

Reserve your spot in the class now – space is limited! See you for ‘Night Before’ Napoletana!
