An Italian baking products company is bringing its industry knowledge to pizzaiolos via a new series of educational programs. The first Università della Pizza was launched in Rimini, Italy, last July, and is accepting applications for the upcoming spring session.
“In the past few years we have seen customers developing new requirements because pizza is seen increasingly as an alternative to restaurants,” sponsor company Molino Quaglia said in a recent press release.
“Therefore pizzaiolos must provide a more articulate service, wider range of choice and work every day to keep costs down and make the business more profitable. If you don’t know the right mixtures, correct working techniques and quality of the raw materials, you jeopardize the possibility of serving even the second course or the sweet (dessert).”
L’Università della Pizza has the objective of providing operators with suggestions and tools to deal with the market and satisfy customers through specific marketing, business management classes and recipes.
The Italian company launched L’Università della Pizza to provide up-to-date answers – for people already in the industry, as well as for those who intend to start working in it – about the requirements of a fast-changing market.
“Particularly worth mentioning is the course on the use of culture yeast and its management in the pizzeria. It is an essential point in the meetings and the one that interests participants most. The use of culture yeast in the dough makes pizza tastier and more digestible, but the use of this ingredient has not been widespread until now. From the viewpoint of a product that differentiates itself because of its quality and aroma, this aspect becomes one of the cornerstones of all courses,” the release said.
The next courses at L’Università della Pizza are scheduled for April 2007.
