Fornoteca’s Duetto self-cooking pizza oven, fuelled by propane and on four caster wheels, is designed with restaurant patios and catering jobs in mind.

The oven, on display at Pizza Fest in Vaughan, Ont., through Edge Food Equipment and Rentals, makes Neapolitan-style pizza. Its fire brick stone reaches 700 F in less than five minutes, according to the company brochure.

The Duetto is on four locking swivel caster wheels, making it useful for restaurant patios and catered events. Users can convert it to a countertop oven by gripping the padded handles at the sides and lifting the oven straight up to detach it from the stand.

It has dual cast iron burners of 100,000 BTUs combined, high-heat retention fire brick stones at the top and bottom, a 16-inch-diameter bottom stone rotates with a motor, and a durable rotisserie motor that can plug in or use two D-sized batteries.

Other features include a rotating stone designed to cook pizza evenly, side handles that stay cool, a removable stainless steel shelf and a stainless steel main door with handle to conceal the propane tank.
