Double demo: Windsor-style specialty pizza and Detroit-style crust tips

Dean Litster, aka Professor Zaaa, is owner of Armando’s Pizza in Amherstburg, Ont., and our 2019 Canadian Pizza Chef of the Year (Open).

Register to watch this special demo, filmed for the Canadian Pizza Summit 2020. In it, Chef Dean will make a traditional Windsor-style with the dough and cornmeal that is iconic for the Windsor area, but he will be putting his own spin on it by using some inventive toppings. The zaaa is called the Simcoe Smokehouse and features pulled pork smoked in house, pickles, bacon, red onion and a BBQ sauce base.

Following that he will focus on Detroit-Style pan pizza including pan setup and strategies to achieve the iconic crispy wall of cheese. Enjoy!
