Butternut squash pizza going over big for small U.S. chain

Brixx Wood Fired Pizza recently introduced a roasted butternut squash pizza with a sage pesto base, goat cheese and mozzarella, the company said in a news release. It is cooked in the wood burning oven and finished with a drizzle of honey.
The chain has stores in Virginia, Alabama, North Carolina, South Carolina, Tennessee, Georgia, Illinois, Indiana and Colorado.
“We know our customers enjoy creative vegetarian recipes, and we wanted to add a fresh alternative for vegetarians,” executive chef Richard Shinault said in the release. “Early response has been very positive. The same customers who enjoy our Pear and Gorgonzola or Pimento Cheese pizzas have loved this one.”
The new pizza is a proprietary recipe, exclusive to Brixx. “When we make a pizza like this, we know from experience it will appeal to a significant niche audience,” Shinault said. “But, those who who love it will make a special trip to Brixx for it. It becomes a signature pizza for us.”
