Many of the products are available in foodservice packs, said Chris Bower of Chris and Tal’s.

“We are particularly excited about the pizza business. Our beef and soy blended Better Ground makes an easy alternative to traditional ground beef and it’s individually quick-frozen, so it’s completely pour-able from the frozen state, aside from having 65 per cent less fat,” added Bower.

All of Chris and Tal’s new products are frozen and precooked, making them easy to store and prepare.

New demi-glace
Famous French chef Georges-Auguste Escoffier’s demi-glace involved a day’s work: buying and roasting bones and vegetables, simmering, watching, straining, and cleaning up.

While the laborious and expensive traditional preparation of demi-glace is far from practical, the trend towards upscale dining and slow cooking methods means operators can expect a push for this posh menu addition from patrons.

Developed as an easily storable, dehydrated format, it replicates from-scratch preparation with the perfect balance of rich, beef flavour and complementary notes of wine and spices. The format frees up cold storage space for operators, in addition to saving the labour and food costs required to prepare demi-glace from scratch.

The new demi-glace is available in a 300g pouch (that yields two litres) and is easily prepared in three steps: just add water, heat and stir.

New SpeedLine POS release
Operational efficiency and ease of use are the focus of the newest release from pizza POS maker SpeedLine.

Pizza supplies
Neptune Food Services, a Gordon Food Service company providing to foodservice operators across Canada has topped up their pizza offerings with some new meat toppings and pizza supplies.

GFS-brand cooked, crumbled Italian sausage is made with 100 per cent pork and no animal byproducts. The company said the consistently steam-cooked pieces are great for pizza coverage with the benefit of less total weight used. The new product is formulated to retain moisture in high temperature ovens.

Neptune’s latest premium meat product, San Daniele sliced prosciutto is air-dried and cured and aged for 12 months with a 180-day shelf life.

Aside from a pizza topping, suggested uses for sliced prosciutto include Italian bread sticks wrapped in prosciutto and provolone, or a lemon, rosemary and
garlic marinated chicken breast, grilled, then wrapped with prosciutto.
